Introduced in 1991, this technique distils the fermentation mash under reduced pressure, preserving delicate aromas while creating a remarkably smooth and refined spirit.
Aged for three years in stainless steel tanks, Sato no Akebono offers a clean, elegant profile with subtle sweetness from Kokuto, a gentle aroma, and a crisp finish. Its light, approachable character makes it an excellent introduction to brown sugar shochu while retaining the depth appreciated by seasoned drinkers.
