Flavor:
Refined and deeply savoury with a gentle natural sweetness unique to snow-aged beef. The traditional Yukimuro snow-aging process slowly concentrates the Wagyu’s umami while preserving a clean, elegant flavour profile. The striploin offers balanced beefiness and creamy marbled fat, with subtle notes of roasted nuts and warm dairy as the fat melts.

Texture:
Silky and exceptionally tender. Fine marbling melts smoothly across the palate, creating a luxurious mouthfeel without feeling overly heavy. A quick sear over high heat or charcoal forms a delicate crust while the interior remains soft and buttery.

Aftertaste:
Long, clean, and lightly sweet. The finish lingers with hints of toasted rice and gentle nuttiness, leaving the palate refreshed rather than heavy.

Pairing Suggestions

Wine:
Elegant reds with freshness and structure work best. Pinot Noir from Burgundy highlights the beef’s finesse, while Northern Rhône Syrah adds subtle spice and depth. Etna Rosso offers bright acidity and volcanic minerality that balances the Wagyu’s richness.

Sake:
A fragrant Junmai Daiginjo provides a crisp contrast to the creamy fat. For deeper umami, a Kimoto Junmai or lightly aged Koshu sake enhances the savoury complexity developed through the snow-aging process.
